Cookies…the perfect companion on a rainy day, with a cup of tea and well, let’s face it, on any occasion.Thanks to Vivianna Does Makeup, I have now found one of the perfect recipes for chocolate cookies and let’s just say, they are heavenly… *warning-do not read if you are hungry*
These cookies are chocolate, with chocolate and a little more chocolate. In other words, delicious! I found this recipe on Vivianna Does Makeup’s youtube channel months ago and since I layed eyes on these beautiful cookies, I have been wanting to try them. Now that I finally have, I just can’t believe it took me so long to do so.
200g Unsalted Butter
150g Caster Sugar
1 Large Egg
275g Self Raising Flour
75g Cocoa Powder
200g Chocolate (you can use milk, dark or white…or all of them if you please!)
What to do:
Preheat the oven to about 180°C, place some baking paper on a large tray and set aside.
Soften the butter in the microwave for about 10 seconds. Add the caster sugar with the butter in a large bowl and mix together using an electric beater until creamy and smooth (about 3 minutes).
Add in the egg and once again, mix it all together with the electric beater.
Now it’s time to add the flour and cocoa powder into the wet ingredients. This time, mix together using a metal or wooden spoon…the beater can get a little messy. Break up about 150g of the chocolate and mix into the batter. If things are looking a little dry, add about a tablespoon of milk and mix together.
Spoon tablespoons of the mixture onto the tray and make them into balls. Using the left over chocolate, place a square on each of the balls and softly push down, squashing them till they’re about 1cm high.
Cook for about 8-10 minutes and leave to cool for 30 minutes. This will leave them perfectly gooey in the center, with a delicious crunchy outer layer.
Well there you have it! The perfect chocolate cookie for any occasion but especially for morning tea with a fresh ice coffee.
