It just occurred to me today, that I haven’t shared with you my absolute favourite pancake recipe that my family has been using since I was little. Pancakes have been such a staple weekend breakfast in my family, and a Sunday morning just wouldn’t be the same without them. We love to put all sorts of fruit on top of our pancakes, from strawberries, raspberries, blackberries and blueberries to bananas. In addition to the must needed maple syrup, we have recently been adding a dollop of greek yoghurt to the top of the pancakes (trust me, it’s delicious).
The recipe we use is by Nigella Lawson and here’s what you need and how you do it!
– 30 grams unsalted butter (melted)
-1 tsp caster sugar
– 2 heaped tsp baking powder
-225 grams plain flour
-300 ml milk
Just simply place all the ingredients in a bowl together and mix them up using a large balloon whisk. Then heat a frying pan on a medium heat with a small teaspoon of butter. Spoon mixture into the frying pan and once bubbles begin to appear on the top of the pancake, it is time to flip it. Cook the other side for another minute, or until lightly browned. Serve with 100% maple syrup, fruit of your choosing and a dollop of greek yoghurt.
